Learn about barbecue with Oak’d Handcrafted BBQ chef

Michael Lane. Kathy Tran.

Chef Michael Lane, the pitmaster at local barbecue joint Oak’d Handcrafted BBQ, is hosting a class to teach about barbecue.

These topics include how to cut and select meats, timing and temperature control, along with how to prepare the finest rubs, seasonings or marinades.

The class is scheduled for 8-9:30 a.m. Nov. 26 at Oak’d on Greenville. Tickets cost $99 per person and may be purchased here.

Lane attended the Culinary Institute of America and has worked at Café Annie, the Pappas concepts and with Dean Fearing.

He opened Oak’d in the Old Town Shopping Center in late 2020, and he told the Advocate last year that he wants it to be something he can leave to his children.

Locally sourced brisket. All sides have a smoked element. But Oak’d also has received attention for its desserts.

Texas Monthly barbecue editor Daniel Vaughn writes, “I’ve had some great desserts from barbecue joints all over Texas, but there is no better array of desserts in the state than at Oak’d.” In particular he mentions the pecan and buttermilk pies, key lime pie, creme brûlée, s’mores pie, banoffee, shortbread, salted chocolate chip cookies and the brisket cake.
